- 3 sweet potatoes
- 1 cup broccoli
- 1 cup cashews
- 1 onion
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1 tablespoon curry paste
- 1 teaspoon turmeric
- 2 cups coconut cream
Prepare the vegetables
Place the Cashew nuts in a bowl with 1 cup of warm water and set aside for 19 minutes
Then place the cashews and water into a blender. Process until smooth.
Heat oil in a wok or big pan.
Add the onion and the spices. Fry until lightly browned.
Add the sweet potatoes and coconut cream to the pan.
Give everything a big stir and simmer until the sweet potato is starting to get soft.
Add the broccoli and the cashews and stir. Simmer for a few more minutes until everything is combined and cooked.
