Sugarfree Berry Chia Seed Jam
This berry chia seed jam is one of my and my baby girl's favorite recipes.
It's soft and easy to make and eat. You can use any berries you have on hand and sweetener of choice. I use a blend of Stevia and Erythritol.
This low carb jam goes well on pancakes and bread.
Ingredients
- 3 cups berries of choice
- 4 tablespoons lemon juice
- Sweetener to taste
- 4 tablespoons chia seeds
Instructions
Step 1
Place the berries and lemon juice in a saucepan
Step 2
Bring to boil over medium heat
Step 3
Cook for a few minutes until softened. Mash finely with a potato masher or fork. Take off the heat.
Step 4
Add the sweetener and chia seeds. Mix and let sit on stove for 20 to 30 minutes.
Step 5
Keeps in the fridge for 5 to 7 days.
