Spinach banana baby pancakes

These pancakes are very delicious, nutritious and my toddler son loves them (even when it flopped a bit when I substituted the banana for avo) . The original recipe says you can also give it to a 6 month old baby. It does take some time to cook so perfect for a lazy weekend day.

Ingredients

  • 1 cup oats
  • 1 cup baby spinach
  • 1 ripe banana
  • 1 egg
  • 0.5 cup milk
  • 2 tablespoons oil
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder

Instructions

Step 1

Grind the oats in a blender until a flour like consistency

Step 2

Add the banana, milk, oil, egg, cinnamon and vanilla extract. Blend until mixed, scraping down the sides as needed.

Step 3

Add the salt and baking powder. Blend again.

Step 4

Heat oil over medium heat. Fry 1 tablespoon worth of batter for each pancake. Repeat until batter is done.
