Easy toddler friendly lasagne

I bought ingredients for a baby led weaning lasagne cups recipe. But afterwards when I reviewed the recipe it was a very complicated and difficult recipe. I wasn't in the mood to cut the lasagne sheets in small circles.

Then I browsed another lasagne recipe and made my own, combining the two recipes. It turns out you can make lasagne the easy way that both or all of your kids can enjoy. My toddler son and 6 months old baby girl enjoyed it a lot and was able to eat everything. I will definitely be making this recipe again.

Ingredients

  • 800g beef mince
  • 1 can crushed tomatoes
  • 1 teaspoon garlic paste
  • 2 tablespoons pizza tomato paste
  • 2 tablespoons beef stock powder
  • 1 packet of lasagne noodles
  • Cheese sauce ingredients
  • 100g butter
  • 4 tablespoons flour
  • 2 cups of milk
  • 1 cup cheese

Instructions

Step 1

Preheat oven to 180 degrees fan bake

To make the cheese sauce:

Melt the butter in a small saucepan over a medium to low heat.

Step 4

Slowly add the flour and stir continuously until a paste forms. Cook this on a low heat for about 2 minutes.

Step 5

Gradually add your milk, whisking every bit into the sauce before adding more. Take your time to prevent the sauce from becoming lumpy. If your sauce is too thick add a little more milk until you get the right consistency.

Step 6

Add in your cheese and stir until it fully melts. Remove sauce from the heat.

To make the mince sauce:

Brown the mince in oil.

When browned, add the tomatoes and tomato paste and sprinkle with beef stock.

To assemble the lasagna

Layer lasagne noodles, cheese sauce, mince sauce ending with a final noodle and cheese layer. Sprinkle with grated cheese.

Step 12

Bake for 30 minutes

Step 13

When serving to a baby, give her one layer of the lasagne with as much mince as she can handle.
