Coconut oatmeal cookies

My toddler boy likes to bake and eat cookies. Luckily I make them healthier by using Stevia instead of sugar and coconut flour instead of normal flour. That way tgese cookies are an everyday toddler snack that you can also give to a baby for baby led weaning breakfast or snack.

These cookies are soft, chewy and contains healthy oats and coconut. It's hard to eat only one. Lucky they are healthy for you.

Ingredients

  • 1 cup butter
  • 4 tablespoons Stevia
  • 3 eggs
  • 2 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Half cup coconut flour
  • 2 cup oatmeal
  • 1 cup dessicated coconut

Instructions

Step 1

Preheat oven to 180 degrees fan bake.

Step 2

Line a baking tray with baking paper.

Step 3

Melt butter in microwave.

Step 4

Cream together butter, Stevia, eggs and vanilla. Set aside.

Step 5

Add dry ingredients (1 tsp baking powder, 1 tsp baking soda, half cup coconut flour, 2 cup oatmeal and 1 cup dessicated coconut) to wet ingredients and mix well.

Step 6

Spoon onto greased baking sheet. Bake for 10 to 15 minutes.
