Coconut oatmeal cookies

These cookies makes the perfect toddler snack, especially if you use Stevia instead of sugar like I do. Also great for baby led weaning. (source)

  • 1 cup butter
  • 4 tablespoons Stevia
  • 3 eggs
  • 2 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Half cup coconut flour
  • 2 cup oatmeal
  • 1 cup dessicated coconut


Step 1

Preheat oven to 180 degrees fan bake.

Step 2

Line a baking tray with baking paper.

Step 3

Melt butter in microwave.

Step 4

Cream together butter, Stevia, eggs and vanilla. Set aside.

Step 5

Add dry ingredients (1 tsp baking powder, 1 tsp baking soda, half cup coconut flour, 2 cup oatmeal and 1 cup dessicated coconut) to wet ingredients and mix well.

Step 6

Spoon onto greased baking sheet. Bake for 10 to 15 minutes.
