Coconut Flour Zucchini and Apple Muffins
Low carb, keto, healthy toddler and baby friendly apple muffins.
These low carb apple and zucchini muffins are seriously good. My toddler son couldn't get enough of it. He had 2.5 whole muffins and stole some off my baby daughter's tray as well.
Bake them as they are when you make them for the first time. Then decide if you want to add more grated apple and or zucchini. I'll add more of the fruit and veg next time.

Ingredients
- 1 grated apple
- 1 zucchini
- 3 large eggs
- Half cup milk
- 55 grams coconut oil or melted butter
- 0.5 cup coconut flour
- 2 teaspoons baking powder
- Optional add ins : vanilla and cinnamon
Instructions
Step 1
Preheat oven to 180 degrees fan bake
Step 2
Grate the zucchini and Sprinkle with a little bit of salt. Rest for 10 minutes and then squeeze out the liquid. Reserve the dry zucchini.
Step 3
Mix the wet ingredients together (apple, zucchini, eggs, milk, butter or oil)
Step 4
Add the flour and baking powder
Step 5
Pour 2 tablespoons in one muffin tin hole until all batter is in pan
Step 6
Bake for 15 to 20 minutes
Step 7
When serving to a baby cut in 4 pieces.
