Coconut Flour Pancakes

These pancakes are my favorite pancakes by far! They are easy to make and low in carbs and sugar. Both my kids devoured these soft coconut flour pancakes. They are suited for a toddler and a baby and they are also dairy and gluten free. After you've made them once before, double the recipe to have some leftovers. Perfect toddler snack or breakfast or baby led weaning meal or breakfast.

  • 40g coconut flour
  • 4 tablespoons coconut oil
  • 2 teaspoons vanilla essence
