Coconut Flour Pancakes

These pancakes are my favorite pancakes by far!

They are easy to make and low in carbs and sugar.

Both my kids devoured these soft coconut flour pancakes. They are suited for a toddler and a baby and they are also dairy and gluten free.

After you've made them once before, double the recipe to have some leftovers.

Perfect toddler snack or breakfast or baby led weaning meal or breakfast.

Ingredients

  • 4 eggs
  • 40g coconut flour
  • 4 tablespoons coconut oil
  • 2 teaspoons vanilla essence
  • 2 teaspoons baking powder (use gluten free if needed)
  • 4 tablespoons sweetener of choice

Instructions

Step 1

Melt the coconut oil

Step 2

Mix the coconut oil, vanilla, sweetener and eggs in a bowl.

Step 3

Add the coconut flour and baking powder and mix again

Step 4

Add coconut oil to a warm pan on the stove

Step 5

Add tablespoons of pancakes to the pan

Step 6

Set a timer for 5 minutes and wait for the pancakes to bake (check them to make sure they are not done)

Step 7

Flip them when done and cook for 1 minute more.

Step 8

Serve with yogurt or cream (dairy free if needed) and fruit
