Chocolate Chia Coconut Flour Muffins

These muffins are so soft and friendly to eat for the whole family. They really are toddler muffins and perfect for baby led weaning as well. Both my kids loved these soft muffins. My almost 3 year old toddler son helped me make them.

Ingredients

  • 6 eggs
  • 110 grams butter
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 tablespoon chia seeds
  • 12 teaspoons sweetener, to taste

Instructions

Step 1

Preheat oven to 180 degrees fan bake

Step 2

Melt the butter

Step 3

Crack the eggs into a medium bowl or the bowl of your mixer

Step 4

Add the butter to the egg mixture together with the sweetener or sugar

Step 5

Add the vanilla essence

Step 6

Mix the above wet ingredients together

Step 7

Add the remaining dry ingredients (coconut flour, cocoa powder, baking powder, chia seeds, sweetener) and mix again

Step 8

Spoon the batter into the muffin pan

Step 9

Bake for 15 minutes at 180 degrees fan forced
