Chicken and veg meatballs

Both my kids loved these chicken and veg meatballs. I doubled the recipe and made a meatloaf and meatballs. My baby girl enjoyed both variations but my toddler son preferred the meat loaf, maybe because it's softer than the meatballs. But both variations are very delicious.

Ingredients

  • 500 grams ground chicken
  • 1/4 cup applesauce or apple puree
  • 1/2 cup shredded carrot
  • 1/2 cup chopped spinach
  • 1/4 cup chopped green onion
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 tsp cumin
  • salt and pepper, to taste

In a large bowl, place all of the ingredients. Gently fold together with your hands until everything is well incorporated. Let sit while you pre-heat the oven.

Step 4

Preheat oven to 180 degrees fan bake.

Step 5

Line baking tray with baking paper.

Step 6

Roll chicken mixture into balls.

Step 7

Bake balls for 20 minutes or until done.
