Berry Chia Seed Pudding/Low Carb Oatmeal
This low carb chia seed pudding or low carb oatmeal is my new favorite snack or breakfast. Even my 10 month old baby girl loved it. Chia seeds are very healthy and has a 5 health star rating. They are full of fiber and omegas and promotes good health. You can add in anything you like, other fruit or chopped nuts or coconut.
- 1/4 cup chia seeds
- 1/4 cup coconut milk or yogurt
- 1/2 cup milk of choice
- 1 teaspoon vanilla essence
- 1 tablespoon sweetener of choice
- 1/4 cup berries
Mix everything in a container that has a lid.
Cover and let sit in fridge for 15 minutes or overnight.
